Cooking For Children Can Be Tricky!

We know it. Children are difficult. Today, they only eat scrambled eggs, but if they see someone having a flat egg tomorrow, they suddenly want flat eggs! Do not despair. Manzanilla Sopha has gathered 5 kid-proof recipes to keep them asking for more and the complaints away.

We’ve gathered time-saving, low-effort recipes for you. These recipes require few ingredients and allow for modifications so you can feed everyone in no time. Tips to remember; pasta is pasta. If you only have shells instead of spaghetti, go with that. You can add more seasonings to your tomato sauce to spike it up. You can use your old veggies in fried rice. You can often make a meal with your leftovers. Be creative, have fun and get to cooking. Let’s get started!

#1 - One pot spaghetti with tomato sauce

This timeless recipe is everyone’s favorite. Your entire family will love a bowl of spaghetti with a rich sauce. You can pair this with a glass of sparkling water to add an extra layer of savor. The best part about this recipe is that you don’t end up with a sink full of dishes. Grab one pot and get to cooking. 

What you’ll need: 

  • Spaghetti
  • Ground beef
  • Onion
  • Olive oil
  • Salt
  • Water
  • Tomato sauce
  • Parmesan cheese
  • Basil
  • French bread

Start by chopping your onions, add some oil to the pot and cook your onions until brown, then add your ground beef or turkey and cook. Once the meat is cooked or browned, add the spaghetti, tomato sauce, and water to the pot. You don’t need to add lots of water, just top off the spaghetti.

While the spaghetti cooks, bake your bread with butter to enjoy as a side. You can sprinkle it with garlic powder or blend butter and fresh garlic if you want garlic toast. Keep an eye on the pasta and occasionally stir it to prevent it from sticking.

#2 - Easy peasy turkey sandwich and chips

Kids love simple meals. Trick yours into eating their veggies while having an energy-packed sandwich. This recipe takes just a few minutes, but it’s a great source of protein and vegetables. 

What you’ll need: 

  • Deli fresh turkey meat
  • Sliced cheese
  • Sliced bread
  • Mustard
  • Tomato
  • Lettuce
  • Low-fat chips

Start by ordering a good quality fresh cut of turkey meat from your local butcher or deli. Once you gather all your ingredients, you can pre-slice the veggies and keep them in your fridge. This way, any family member can enjoy a sandwich on the go.

First, lay down two slices of bread, cover one side with mustard, and place a slice of tomato and lettuce on it. Top the other slice of bread with turkey meat and cheese, then put both sides together. You can toast the sandwich on a pan with some butter if you want, or you can serve it cold. Remember to pair it with some chips for extra crunch and happiness.

#3 - Leftover fried rice

Got rice and eggs? You are ready to make fried rice. Don’t let anyone discourage you from having your unique version of fried rice. All you need is creativity, eggs, and rice. If your rice is old, your fried rice will be even better. But it’s also okay if it’s fresh. 

What you’ll need: 

  • Old or fresh rice 
  • Eggs 
  • Salt and pepper
  • Onion & Bell pepper
  • Optional: Soy sauce 
  • Optional: Frozen veggies
  • Optional: Bacon or ham 

Start by throwing a dash of oil in your pan. While the oil is heating, chop onions and bell peppers. Throw the chopped veggies in the preheated pan. Once the veggies are tender, add rice and a chunk of butter and fry for a few minutes. When the rice seems fluffy and fried, move it to the side and create a big hole in the middle. Add some oil or butter to this empty space and crack a few eggs in there. Scramble and cook the eggs until soft, then mix them with the rice.

If eggs and rice are all you have, you can stop here. Season with some black pepper, garlic powder, and salt until desired. Enjoy your quick and easy meal. If you have soy sauce and other vegetables, add them to the pot now. Stir in your frozen veggies or fresh ones. You can also use a can of drained vegetables. Be mindful of how much soy sauce you add to avoid salty rice. Use any veggies and sauces available at home – make it your personal version. Feel free to try new things!

#4 - Homemade chicken nuggets

Is there anything kids love more than chicken nuggets? We doubt it. All kids love a few nuggets and fries with some ketchup. Manzanilla Sophia brings you a healthy spin on this delicious meal that will leave your children asking for seconds.

What you’ll need: 

  • Chicken breast 
  • Pickle Juice
  • Flour 
  • Salt 
  • Chicken Bouillon
  • Onion & Garlic Powder
  • Paprika 
  • Black pepper
  • 1 egg & whole milk 
  • Homemade fries or frozen fries 

Start by cleaning and cutting your chicken breast into chunks. Place the chicken chunks in a ziplock bag and top with pickle juice. Allow the chicken to brine overnight or at least 1hr. Next, mix all the dry ingredients in a bowl. In a separate bowl, whisk the milk and the egg until homogeneous. Dip your chunks of chicken in the egg mix, then in the flour mix, and repeat once again.

Fry until crispy, and enjoy with some homemade fries. Other alternative sides include fruits, a green salad, or sliced tomatoes and cucumbers. You decide which side your family will like the most. Enjoy this delicious meal with your loved ones. 

#5 - Old trusty pizza

Let’s be honest. The only thing kids love more than chicken nuggets is pizza. All kids love a hot, steamy slice of freshly baked pizza.
